Step-by-Step: Medicinal Mushroom Broth
Gather the ingredients: I used Cordyceps, Turkey Tail, Porcini, Shiitake, and Lion’s Mane mushrooms. I also added onion, celery, carrot, garlic, fresh ginger, sage, rosemary, chives, thyme, and salt to taste. You can use all these ingredients or swap in different mushrooms, herbs, or vegetables as you like.

Simmer: Add all ingredients to a large pot. Bring to a boil, then reduce heat and simmer gently for three to four hours with the pot partially covered.

Storage: Remove the pot from heat and allow it to cool slightly. Add salt and pepper to taste, strain the broth, and transfer it to jars or containers. Refrigerate for up to one week or freeze for longer storage

Serve & Enjoy: Heat the broth until steaming. You can sip it straight or use it as a base for soups or any recipe you like.
Recipe: Medicinal Mushroom Broth
Ingredients (makes approximately 8 cups)
8 cups filtered water
4 g dried cordyceps
2 g dried turkey tail mushrooms
4 g dried porcini mushrooms
3 oz fresh shiitake mushrooms, halved
2 oz fresh lion’s mane mushroom, torn
½ onion, cut into chunks
1 celery stalk, cut in half
1 large carrot, cut in half
2 garlic cloves, smashed
Several chunks fresh ginger
Mixed fresh herbs as desired including sage, rosemary, chives, and thyme etc.
Salt and pepper, to taste

Simmer the broth: Add all ingredients to a large pot. Bring to a boil, then reduce heat and simmer gently for 3–4 hours, partially covered.

Strain & store: Remove from heat and cool slightly. Strain and transfer to jars or containers. Refrigerate up to 1 week or freeze for longer storage.

Mushroom Miso Soup Recipe

Ingredients (per serving)
1–1½ cups medicinal mushroom broth
1–2 tsp miso paste
Small handful dried or fresh seaweed
¼ cup cubed soft tofu
1–2 tbsp chopped green onion
Directions

Add seaweed and tofu; simmer gently for 2–3 minutes.
