Plate of Vegan Gingersnap Cookies

These are the perfect cookies for the holidays, they’re spicy, warm, sweet and so delicious. These cookies also have a few ingredients that have many health benefits such as molasses and ginger.

After making these, the rest of my family could not get enough and they were gone within a couple hours so definitely try these and maybe even bring them to your next holiday party!

Source of Minerals and Antioxidants

Molasses has a good source of iron, copper and selenium. Selenium is a powerful source of antioxidants, and copper, paired with iron helps the body form red blood cells and can assist in immune function. 

Ginger, the other healthy ingredient in these is known for its wonderful immune system supporting benefits. Ginger has also been known to help with nausea, morning sickness and indigestion. It is a powerful antioxidant as well. 

Step-by-Step Recipe

This recipe was super simple to make and only takes a couple minutes.

Start by creaming together ¾ cup vegan butter, ¾ cup brown sugar, ¼ cup white sugar, and ¼ cup molasses.

Next, get a substitute for one egg, I use a flax egg but you can also use egg replacer, applesauce or mashed banana.  Add that in along with 2 tsp. vanilla extract.

Once that’s all combined you can slowly add in the dry ingredients,  2 cups and 2 tbsp. all purpose flour, 2 tsp. ginger powder, 1 tsp. cinnamon, 1 tsp allspice  and 1 ½ tsp baking soda.

Then roll the dough into medium/ small sized balls, mine made about 24 cookies. Once I finished rolling one tray I put it in the refrigerator for about 10 minutes.

Once those are done chilling, roll them in a mixture of cinnamon and sugar and place back on the baking sheet. 

Then squish them down with a fork  criss cross and place in the oven on 350 degrees for about 12-15 minutes

That's it! This recipe seems like it could be intimidating but it's actually one of the most simple desserts I’ve ever made.  

Vegan Gingersnap Cookies Recipe: 

Ingredients: 

  • ¾ cup vegan butter 
  • ¾ cup brown sugar 
  • ¼ cup sugar 
  • ¼ cup molasses 
  • Replacement for one egg 
  • 2 tsp vanilla extract 
  • 2 cups + 2 tbsp all purpose flour 
  • 2 tsp ginger powder 
  • 1 tsp cinnamon 
  • 1 tsp allspice 
  • 1 ½ tsp baking soda 

Instructions:

  • Cream together vegan butter, sugar, brown sugar and molasses 
  • Add in egg replacement and vanilla 
  • Slowly add in flour, ginger, cinnamon, allspice and baking soda 
  • Roll dough into about equal sized balls 
  • Chill for about ten minutes 
  • Roll in cinnamon and sugar 
  • Squish down with a fork in both directions 
  • Place in the oven at 350 for about 12-15 minutes
