Banana bread is always my go to when I want a tasty treat but don’t know what to make. This is the perfect twist on your everyday banana bread to make it an amazing snack for fall. For this recipe I made a combo of banana and pumpkin bread. This recipe is also made with real pumpkin and turmeric which helps to give it the orange color. 

Both pumpkin and turmeric have tons of health benefits, for example pumpkin is filled with vitamin A, vitamin  C and antioxidants. The high amount of vitamins can help to boost your immunity.

Let's start

To start off this recipe preheat your oven to 350 degrees. Then combine  ¼ cup plant based milk with ½ TSP apple cider vinegar. This will make kind of a makeshift buttermilk. (If you’re not vegan you can just add ¼ cup of normal buttermilk.) Next set that mixture to the side until we’re ready to use it, about 5 minutes.

Next you’re going to cream together ½ cups vegan butter and ¾ cups maple syrup. Let that run on medium speed in a mixing bowl for about 5 minutes or until completely combined.

While that's mixing, begin mashing three over ripe bananas and add them to the bowl along with milk mixture and ½  teaspoon vanilla extract. Allow that to combine completely.

Now we add the dry ingredients, 1 ½ cups white flour, ½ cup whole wheat flour, 1 tsp baking powder, ½ teaspoon baking soda, 2 tablespoons pumpkin pie spice and ¼ teaspoon salt and allow that to completely combine. 

Step 4 - completely to create a swirl within the batter.

Once thats mixed measure out about a cup of batter and put in a separate bowl, to that add ½ cup of pumpkin puree and 1 teaspoon of ground turmeric and mix. 

Grease a nine inch loaf pan and pour in both mixtures, one spoon at a time alternating colors to make almost a 2x3 checkerboard pattern in the pan.

Once that pan is full, about ¾ of the way, get a chopstick or skewer and mix but not completely to create a swirl within the batter. 

Next I sprinkled the top with cinnamon and sugar and put in the oven for 45 minutes or until you put in a tooth pick and it comes out clean. Then wait about 30 minutes to an hour before cutting to make sure it has cooled enough.

Pumpkin Spice Banana Bread Recipe:

Ingredients: 

  • ¼ cup plant based milk
  • ½ TSP apple cider vinegar
  • ½ cup vegan butter
  • ¾ cup maple syrup
  • 3 very ripe bananas
  • 1 tsp vanilla
  • 1 ½ cup white flour
  • ½ cup whole wheat flour
  • 1 TSP baking powder
  • ½ TSP baking soda
  • 2 TBSP pumpkin pie spice
  • ¼ TSP salt
  • 1 TSP ground turmeric
  • ½ cup pumpkin puree 

Instructions: 

Preheat the oven to 350 degrees. In a small bowl mix together plant based milk and apple cider vinegar and set aside for a few minutes. In a large mixing bowl cream together vegan butter and maple syrup.

Once completely combined add mashed bananas, milk mixture and vanilla. Then add all the dry ingredients, flours, baking powder and soda, pumpkin pie spice and salt and mix on medium speed for about 5 minutes.

Measure out a cup of batter into a separate bowl and add pumpkin and turmeric. Spoon batter into a nine inch loaf pan alternating colors until it is about ¾ of the way full and mix but not completely to swirl the batter. Sprinkle the top with cinnamon and sugar and place in the oven for about 45 minutes.

Let the bread cool for about 30 minutes to an hour before cutting and enjoy!
