How to Make Creamy Carrot Soup with Sweet Potatoes & Ginger

This recipe is super easy and comes together in just a few minutes.

Chop the Veggies: Start by chopping white onion, ginger, carrots, and sweet potato.

Sauté to Enhance Flavors: In a soup pot, add a drizzle of olive oil and onions, and sauté until translucent. After that, add the carrots, ginger, and sweet potato into the pot and sauté for a couple of minutes to allow the flavors to combine.

Simmer: Then, add in your vegetable stock and allow that to simmer with the vegetables until they are fork-tender and all flavors have melded together. At this step, add salt and pepper to taste. Note: Ginger and the stock add a lot of flavor on their own!

Blend: Use an immersion blender or a regular blender and blend until the veggies are completely pureed and smooth.

Finish and Serve: Add this to a bowl and drizzle with cream, chives, pumpkin seeds, or parmesan. Serve this with a meal or enjoy it by itself. 

Recipe: Warming Carrot Ginger Soup

Ingredients:

  • 1 Tbsp olive oil
  • ½ Yellow onion
  • 2 Tbsp ginger, sliced
  • 4-5 Medium carrots chopped
  • 1 Medium sweet potato
  • 4 cups vegetable stock
  • Salt and pepper to taste 

Instructions: 

Chop onions, ginger, carrots, and sweet potatoes. Add olive oil into a soup pot on medium heat. Sauté onions until translucent. Add carrot, ginger, and sweet potato. Sauté that for about 5-7 minutes.

Add vegetable stock and allow to simmer until vegetables are fork tender. Blend with an immersion blender (a regular blender works as well) and blend until completely smooth. Add this to a bowl and top with cream, parmesan cheese, chives, pumpkin seeds, or whatever else you like!
