Viral Green Goddess Salad Recipe

To make this Green Goddess Salad, start by prepping your vegetables. Begin with half a head of cabbage. You’ll want to slice it thinly and then chop it into small, bite-sized pieces. The key here is to keep all the vegetables roughly the same size, so they blend well and create a balanced texture in every bite.

Next, take two small Persian cucumbers, and dice them into small cubes. Persian cucumbers have a mild, crisp flavor that complements the cabbage, so cutting them into similar-sized pieces helps ensure every forkful has the perfect mix of crunch.

Lastly, finely chop a small handful of fresh chives. Once everything is chopped, toss the cabbage, cucumbers, and chives together in a large bowl, making sure the vegetables are evenly mixed and ready to soak up the Green Goddess dressing.

Ingredients:

  • Half a head of cabbage
  • 2 small Persian cucumbers
  • Small handful of chives (for salad)
  • About ½ cup Olive oil (for dressing)
  • Juice of 1 lemon
  • 2 cloves garlic
  • 1 small shallot
  • Small handful of chives (for dressing)
  • Handful basil leaves
  • Large handful of spinach
  • Salt to taste 

Instructions:

For the Salad:

  • Slice half a head of cabbage thinly and chop into small, bite-sized pieces.
  • Dice 2 small Persian cucumbers into small cubes.
  • Finely chop a small handful of fresh chives.
  • Toss the chopped cabbage, cucumbers, and chives together in a large bowl.

For the Dressing:

  • In a blender, add olive oil, lemon juice, garlic, shallot, chives, basil, spinach and salt. 
  • Blend until smooth, adjusting consistency with more oil or lemon juice if needed.
  • Pour the dressing over the salad and toss to coat evenly.
  • Enjoy!
