Sweet Potato Herbal Cocoa Brownies

These sweet potato brownies are rich, fudgy, and naturally sweetened with honey. Instead of traditional cocoa powder, this version uses Herbal Roots Cocoa Blend for added flavor and function. The blend brings rich chocolate taste while making these brownies a more intentional treat.

This time, we used the Digestive Cocoa Blend, but the Energy Cocoa Blend works beautifully as well, depending on what you’re in the mood for.

How to Make Sweet Potato Brownies

Prepare the Pan:
Preheat oven to 350°F. Line an 8 x 8-inch pan with parchment paper, leaving overhang on two sides.

Mix Wet Ingredients:
In a medium bowl, whisk together the mashed sweet potato, eggs or egg alternative, honey or maple syrup, melted butter or coconut oil, and vanilla extract until smooth.

Add Dry Ingredients:
Stir in the flour, Herbal Roots Cocoa Blend, baking powder, salt, and chocolate chips until fully combined.

Bake:
Pour batter into the prepared pan and smooth evenly. Bake for 28 to 30 minutes, or until the center is set.

Cool:

Ingredients

1 cup mashed sweet potato puree
2 eggs or egg alternative
¼ cup honey or maple syrup
¼ cup unsalted butter, melted and slightly cooled (or coconut oil)
1 teaspoon vanilla extract
½ cup all-purpose flour
¼ cup Herbal Roots Cocoa Blend
¼ teaspoon baking powder
¼ teaspoon salt
½ cup chocolate chips or roughly chopped chocolate of your choice

Egg Alternative

For 1 flax egg:
1 tablespoon ground flaxseed
2 tablespoons water

For this recipe, replace the 2 eggs with:

2 tablespoons ground flaxseed
4 tablespoons water

Instructions
