This recipe comes together super easily and is very easy to make. Start with preheating your oven to 350 degrees. Boil about 1 cup of water and add to a bowl with the goji berries to allow them to rehydrate. 

Next, mix the dry ingredients together: flour, baking powder, salt and cinnamon.

In a separate bowl mix the wet ingredients: mashed bananas, eggs or flax eggs, milk, maple syrup and vanilla. 

Slowly whisk together wet and dry ingredients, adding more milk if needed. 

Add your toppings including soaked goji berries, chocolate chips, and shredded coconut, and slowly fold in until everything is completely combined.

 Add muffin batter to a lined muffin tin. Allow those to bake for about 20 minutes until fragrant and puffed up. 

After that, allow them to cool slightly and enjoy warm or freeze for future breakfasts!

Recipe: Superfood Goji Berry Muffins

  • 2 Cups whole wheat flour
  • 1 ½ tsp baking powder
  • 1 tsp Cinnamon
  • ½ tsp salt
  • 2 Ripe bananas
  • 2 Eggs or equivalent flax egg
  • 2 Cups non-dairy milk
  • ¼ cup maple syrup
  • 1 tsp Vanilla extract
  • ½ Cup goji berries
  • ½ Cup shredded coconut
  • ½ Cup dark chocolate chips

Instructions: 

Preheat the oven to 350 degrees. Soak goji berries in hot water for about 15 minutes. Mix together dry ingredients: flour, baking powder, salt and cinnamon. In a separate bowl mix together wet ingredients: mashed bananas, eggs, milk, maple syrup and vanilla extract. Slowly combine wet and dry ingredients. Add goji berries, coconut and chocolate chips and fold everything together.

Add the batter to a lined muffin tray and place in the oven for about 15 to 20 minutes, until fragrant and puffed up. Remove from the oven and allow to cool slightly before enjoying!
