Summer Watermelon Caprese Salad

With the end of summer approaching and temperatures peaking, there's nothing like seasonal fruits and vegetables to hydrate and nourish your body. Heirloom tomatoes and watermelon are bright, juicy, and bursting with refreshing flavor. Watermelon is made up of over 90% water, making it a perfect hydrating food when the temperature soars. That natural sweetness pairs beautifully with creamy mozzarella and the tang of balsamic glaze, creating a dish that’s as beautiful as it is satisfying. It’s the kind of recipe that keeps you cool and refreshed without feeling heavy - perfect for hot afternoons or lazy al fresco dinners.

This salad gets even more depth thanks to heirloom tomatoes, which bring a rainbow of colors and a rich, garden-fresh flavor. Each variety has its own subtle notes, from sweet and fruity to earthy, making every bite a little different. Heirloom tomatoes are packed with vitamins A and C, which help keep your skin and immune system healthy. Fresh basil contains vitamin K, which plays a role in bone and circulatory health, as well as compounds that have been celebrated for years in traditional wellness practices.

Fresh Watermelon Caprese Salad with Mozzarella and Basil

This recipe is super easy to make and perfect for days when you don't want to start up the stove or oven. Start by cubing some watermelon into bite-sized pieces and set that aside. 

I like to use heirloom tomatoes for this because of the bright colors and large size, but any tomatoes will work. I made large thin slices and laid them out on a serving plate.

After that, add on cubed watermelon and your fresh mozzarella. I cut my mozzarella into thin slices and then tore it up into smaller pieces and layered it on top of the tomato and watermelon.

Cut your basil into thin ribbons. I do this by stacking 4-5 basil leaves on top of each other and rolling it up into a sort of long tube shape, and then slicing them thinly. Cutting this way ensures the basil flavor spreads evenly and adds a nice touch.

Recipe: Summer Watermelon Caprese Salad

Ingredients:

  • About ¼ of a medium-sized watermelon, cubed 
  • 1-2 Heirloom tomatoes
  • 1 medium-sized ball of mozzarella, shredded
  • 4-6 Basil leaves
  • Salt to taste
  • Drizzle of olive oil
  • Drizzle of balsamic vinegar 

Instructions: 

Cube watermelon and set aside. Thinly slice heirloom tomatoes and add to your serving bowl or plate. Generously salt the tomatoes, making sure every bite gets salted. Layer on watermelon cubes, mozzarella and thinly sliced basil. Drizzle with olive oil and balsamic vinegar and serve. Enjoy!
