Strawberry Chia Seed Jam

Unlike traditional jam recipes that require loads of sugar and long cooking times, this version uses just a handful of ingredients and comes together in less than 30 minutes. How to Make Strawberry Jam with Chia Seeds

To start, chop your strawberries into roughly bite-sized pieces. Turn a saucepan on medium heat and add the strawberries. Allow them to cook until the strawberries start to break down and start to look sort of like jam. This will only take a few minutes.

After the strawberries have cooked down, add vanilla and salt for a flavor boost, honey for some extra sweetness and chia seeds. 

Allow this all to cook on low until everything is combined, the chia seeds have absorbed the liquid, and the mixture has thickened slightly.

Take everything off the heat and transfer it into a jar. Allow this to cool slightly and enjoy on toast, in yogurt, oatmeal, or by itself for an extra fiber boost! 

This recipe can also be used with any fruit of your choice, if you just sub strawberries for something else! I love this with raspberries, blueberries and peaches!

Recipe: Strawberry Chia Seed Jam

Ingredients:

  • 2 Cups strawberries
  • 1 Tsp vanilla
  • 2 Tbsp lemon juice
  • 2 Tbsp honey
  • 3 Tbsp chia seeds
  • Pinch of salt 

Instructions: 

Chop all strawberries into bite sized pieces. Add strawberries to a small saucepan on medium heat. Allow those to cook, stirring occasionally, until broken down and bubbly, about 8 minutes. Turn the heat to low and add vanilla, lemon juice, honey, chia seeds and salt. Stir all that to combine. Once the chia seeds have absorbed the liquid and the mixture has thickened slightly, take this off the heat. This will take about 5-8 minutes. Add this to a glass jar and enjoy!
