This salad is so fresh and perfect for the quickly approaching warmer months. It is crisp, sweet and a great way to switch up your salad game. While tasting amazing it also has ingredients with so many natural health benefits like spinach, mint, and farro.

Healthy Natural Ingredients

Spinach was used as the base for this salad alongside mixed baby greens and contains a lot of iron. It also has a high vitamin E content which is great for your immunity.

Farro

Farro is a relatively unknown grain and has a higher fiber and protein content than most other grains which is so important for gut health, digestion and will leave you feeling full longer. Additionally farro and strawberries contain a wide range of healthy antioxidants.

Mint, another ingredient in this salad, is great for indigestion and can help to relieve stomach aches. The mint is also a crucial ingredient because it gives it such a unique and fresh flavor.

How to Make a Summer Salad

For this salad I started by cooking ½ cup farrow in 1 ⅓ cup water but follow the instructions on the back of the bag for best results. Start by bringing it to a boil and then cover and let cook for about 10-13 minutes or until soft.

Assembling the salad is really quick and easy, the only real prep is cooking the farro. After that I used about ½ bag each of baby spinach and mixed greens, as well as 1 whole avocado cubed, about 1 cup chopped strawberries, about ½ cup - ¾ cup chopped English cucumber and about 2-3 tablespoons finely chopped mint as well as all the farro.

Ingredients: avocado, farro, strawberry, spinach, mint

 

Toss that all together and drizzle with olive oil and raspberry vinaigrette and serve!

Strawberry and Mint Summer Salad Recipe: 

Ingredients: 

  • ½ bag baby spinach 
  • ½ bag mixed baby greens 
  • ½ cup farro 
  • 1 whole avocado 
  • 1 cup chopped strawberries 
  • ½ -¾ cup chopped English cucumber 
  • 2-3 tablespoons finely chopped mint 
  • 2-4 tablespoons olive oil 
  • 2-4 tablespoons raspberry vinaigrette 

Instructions: 

  •  cook ½ cup farrow in 1 ⅓ cup water, bring to a boil then cover and cook on medium/low heat for 10-13 minutes 
  • While that's cooking, prep and chop greens, avocado, strawberries, cucumber and mint 
  • Combine all above ingredients along with farro and toss in olive oil and raspberry vinaigrette
