Wait! Don't throw out your pumpkin seeds. You can make a delicious and easy snack out of them. Seriously, these roasted pumpkin seeds were so good and my whole family could not stop eating these after we made them.

Pumpkin seeds are also surprisingly really healthy, For how small they are they have a good amount of protein and a lot of healthy fats. They are also packed with antioxidants, potassium and magnesium. Animal studies have shown that pumpkin seeds may improve heart health due to their high content of antioxidants, zinc, magnesium and fatty acids.

Super Easy to Add to your Diet

A great thing about pumpkin seeds is that they are super easy to add to your diet and can be thrown into practically any salad, over soup or even just by themselves. If you season them right they can be addictive, and what's great is the possibilities are endless for how you can season them. 

This recipe also works with other similar seeds like, butternut squash, acorn squash or any similar vegetable so you can make these all year round, not just halloween.

To start off, scoop out the guts of your pumpkin and add them to a bowl of water. Try to separate the seeds as best as you can from the guts and place into a separate bowl. This process is a little bit tedious but it doesn't have to be perfect.

 

 

Now add the pumpkin seeds to a salted pot of water on the stove and let bowl for about 5 minutes. This will season them a little bit, similarly to boiling pasta in salted water.

Boiling them will also help make sure they are completely clean and help to remove any extra pumpkin goo that got left behind before. 

Preheat the oven to 350 degrees and line a baking sheet with parchment paper.

I then spread out the pumpkin seeds evenly on a baking sheet and drizzle with olive oil. Now add any seasoning you like, I used salt, pepper, garlic powder and a generous amount of this 24 herbs and spices mix and they came out so good! Feel free to use curry powder, chilli powder or anything else you enjoy!
