Once baked, you can enjoy it plain or toss in dried fruit, dark chocolate chunks, or even coconut flakes to make it your own. How to Make Homemade Granola With Pumpkin Seeds

To start this recipe, make sure to heat your oven to 325 degrees.

Prepare Wet Ingredients: After that, melt the liquids together in a small saucepan. Maple syrup, coconut oil, almond butter and vanilla come together to make a sweet, sticky sauce to hold together all the dry ingredients.

Combine Everything: Grab a glass bowl and add the oats, pumpkin seeds and buckwheat flour and mix. Add in the liquids and use a fork to fully combine.

Bake: Spread the granola evenly on a parchment-lined baking sheet and place in the oven for about 20 minutes, mixing around once about halfway through. 

Cool and Add Your Favorite Toppings: Take the granola out of the oven and allow it to cool. At this point, add any dried fruit or chocolate. I used dried cherries, but feel free to switch it up with whatever you like!

Recipe: Pumpkin Seed Granola

Ingredients:

  • 1 Cup oats
  • 1 Cup pumpkin seed
  • 1 Cup buckwheat flour
  • ¼ Cup coconut oil
  • ¼ Cup maple syrup
  • 2 Tbsp almond butter
  • 1 Tsp vanilla extract
  • ¼ Cup dried cherries 

Instructions: 

Preheat oven to 325 degrees.

In a small saucepan over medium-low heat, combine coconut oil, maple syrup, almond butter and vanilla extract. Mix everything together until melted and combined.

In a glass bowl, mix together oats, pumpkin seeds and buckwheat. Pour in liquids and stir until completely combined.

Transfer the granola mixture onto a parchment-lined baking sheet. Place this in the oven for about 20 minutes, mixing around once about halfway through.

Once crispy and golden, take this out of the oven and allow it to cool. At this point, add in dried cherries and store in a glass jar. Enjoy!
