These bars are super quick and easy to make. Start by combining your wet ingredients. This includes pumpkin puree, eggs, milk (or milk substitute), maple syrup and vanilla. Stir until it is completely combined and set aside.

Next combine your dry ingredients: oats, ground flax, chia seeds, cinnamon, pumpkin pie spice and baking powder. Stir that with a fork until evenly combined, and then slowly fold in the wet ingredients until it forms a thick batter.

Pour this into a parchment-lined baking tray and place in the oven. Allow that to bake until fully cooked through. This will create fragrant, slightly sweet and fiber-filled pumpkin oat bars, perfect for breakfast with some yogurt for more protein or just by themselves as a snack!
Recipe: Morning Fiber-Filled Pumpkin Bars
- ¾ Cup pumpkin puree
- 1 Cup milk (or milk substitute)
- 2 Eggs
- ½ Cup maple syrup
- 1 Tbsp vanilla extra
- 1 ½ Cup oats
- ½ Cup ground flax
- 1 Tbsp pumpkin pie spice
- 2 Tsp cinnamon
- 1Tsp baking powder
- ½ Tsp salt
Instructions:
Preheat the oven to 375 degrees. Combine wet ingredients and set aside. Stir together all dry ingredients, then fold in wet ingredients and mix until fully combined. Add this to a parchment-lined 8x8 baking sheet and place in the oven for 40 minutes until cooked all the way through. Once done, cut into bars and enjoy!
