Begin by peeling the carrots into long, thin ribbons. I found it was easiest and created the best shaped ribbons to peel starting from the thickest part of the carrot.
Once your carrot ribbons are ready, it’s time to dress them. Drizzle a bit of soy sauce, a splash of rice vinegar, some sesame oil and a squeeze of lime over the top. If you like a bit of heat, add a sprinkle of chili flakes or a drizzle of chili oil. Finally, sprinkle some sesame seeds over top.
Toss everything together lightly, just until the carrots are well-coated with the dressing. This salad is perfect as a side dish or even as a light, refreshing lunch on its own. The flavors are balanced beautifully, with the salty umami of the soy sauce, the tangy brightness of the rice vinegar, and the rich nuttiness of sesame oil, all tied together by the subtle sweetness of the carrots.
