Homemade Vegan Marshmallows

You need to try this homemade marshmallows recipe. They were surprisingly easy to make and turned out so good. These also have real marshmallow roots, which marshmallows were originally made with and how they got their name.
Marshmallow root has so many amazing health benefits. It's definitely a shame that marshmallows got phased out through the years, but with this recipe you’ll be able to see how they were originally made with a twist to be made vegan!
The process of making this recipe is actually very interesting and used ingredients I would have never expected. In normal marshmallows the fluff is made out of meringue but since these are vegan we’re using aquafaba which is the liquid of a can of chickpeas. It sounds weird but whipping it produces a similar effect to meringue and it also has a very neutral taste so it absorbs whatever flavor you add to it.
To start off this recipe dust a large baking pan with powdered sugar. This will help with sticking.
Next we make the fluff. I used one cup of aquafaba which was equal to one can of strained liquid. Add that to a stand mixer, along with 1/2 teaspoon marshmallow root powder and ¼ teaspoon cream of tartar. Allow that to mix on the highest speed for ten minutes. Add in 4 tablespoons (not a typo) vanilla extract around the 6 minute mark.
I then made the syrup which was 1 ⅓ cup water, 2 ¼ cups sugar and 2 tablespoons agar agar. Let that boil on the stove just until the sugar has dissolved, stirring the entire time.
Then add the syrup to the fluff in the mixer on low speed and pour in very slowly. Beat for about 1 minute
Transfer the mixture to the baking pan and dust the top with powdered sugar.
Let cool and set for at least an hour but the longer the better, preferably overnight.
Once those have set, cut them into cubes and use in hot cocoa, in deserts or just by themselves!

- A couple tablespoons powdered sugar, for dusting
- 1 cup aquafaba
- ½ teaspoon marshmallow root powder
- ¼ teaspoon cream of tartar
- 4 tablespoons vanilla extract
- 1 ⅓ cup water
- 2 ¼ cup sugar

Instructions:

Dust baking pan with powdered sugar

Whip aquafaba, cream of tartar, and marshmallow root powder on the highest speed for 10 minutes

Add in vanilla around the 6 minute mark

Make the syrup, add water sugar and agar agar into a pot and boil until the sugar is dissolved

Add the syrup the a meringue mixture pouring very slowly and beat for 1 minute on low speed

Pour the entire mixture into the baking pan and dust the top with powdered sugar

Let set for at least an hour
