This recipe was actually super easy to make. To start you’ll need elderberry syrup which there are more in depth instructions in our Elderberry Syrup Recipe blog.
Essentially though, you simmer ¾ cup dried elderberries in 3 cups water for about an hour or until reduced by half. Strain elderberries keeping the juice in a bowl and add 1 cup of honey.
To make it into gummies you add one cup of the elderberry syrup back into a sauce pan and over medium heat add two more tablespoons of honey and 2 tablespoons of agar agar.
Agar agar is a vegan gelatin substitute derived from seaweed. It is very easy to use and works very well in this recipe.
Once you add the agar agar stir continuously until the mixture noticeably thickens. For me this only took about 30 seconds. Once that happens you can cut the heat and start spooning the mixture into your gummy molds. I was able to do this by scooping a spoon full of the elderberry mixture onto the mold and using the back end of the spoon to press the mixture into the mold while scraping off any excess.
The agar agar works fast so work in small batches and try to get this into the molds as quickly as possible. With part of the mixture that had gotten a bit too solid before I was able to get to it, I took small chunks off and rolled them into gummy sized pieces and this worked great as well.
Once you have everything in the molds, put them in the refrigerator for about 10-15 minutes to cool. Once they are ready just pop them out and place them into a jar for safe keeping!
I found this recipe to be much easier and faster than I was expecting. Once you have elderberry syrup ready it really only takes about 5-10 minutes before you can have them in the fridge to set. This made more than 30 gummies which is the average in a bottle you would buy from the store for about $30. I highly recommend trying this recipe out, they taste great and are perfect for kids, especially with back to school and the colder months right around the corner.
Recipe: Elderberry Gummies
Ingredients:
- 1 Cup elderberry syrup
- 2 Tbsp honey
- 2 Tbsp agar agar
Instructions:
- Put elderberry syrup in a saucepan over medium heat
- Add honey and agar agar
- Stir continuously until ingredients start to noticeably thicken
- Spoon into gummy molds, or roll into small balls
- Place in the refrigerator for about 10-15 minutes to cool
- Enjoy!
