Hibiscus Strawberry Lime Popsicles

To begin, bring a pot of water to a boil on the stove and add your loose leaf hibiscus tea to the pot. Lower the heat to a gentle simmer and allow the tea to steep and reduce by half.

Once the tea has reduced, transfer it to a blender. Add fresh strawberries (frozen work as well) and one peeled lime.

Blend the mixture until it is completely smooth, ensuring that all the ingredients are fully combined. When the mixture is ready, carefully pour it into popsicle molds. Place the molds in the freezer and let them freeze for about 8 hours or overnight. Once frozen, your delicious hibiscus strawberry lime popsicles will be ready to enjoy.

Hibiscus Strawberry Lime Popsicles

Ingredients:

Hibiscus tea:

  • 2 cups water 
  • ½ cup loose leaf hibiscus tea 
  • ½ cup honey (or to taste) 

Popsicles: 

  • 1 - 1 ½ cups hibiscus tea 
  • 2 cups strawberries (frozen or fresh) 
  • One lime (peeled) 

Instructions:

  • Begin by bringing a pot of water to a boil.
  • Once the water is boiling, add hibiscus tea to the pot.
  • Reduce the heat to low and let the tea simmer until it has reduced by about half 
  • After the tea has reduced, strain into a bowl, and add honey 
  • Stir until dissolved 
  • Pour tea into a blender. Add the strawberries and one lime, peeled. Blend until the mixture is completely combined and smooth.
  • Pour the mixture into popsicle molds.
  • Place the molds in the freezer and let them freeze for about 8 hours or overnight.
  • Enjoy!
