Herbal Pumpkin Spice Simple Syrup

It’s no wonder spices like cinnamon, ginger, cloves and nutmeg are associated with autumn and the coming winter. These powerful herbs have been used for centuries to support a healthy immune system. Currently the pumpkin spice trend has become associated with sugary lattes, baked goods, probably the last thing your body needs when trying to stay healthy and balanced during the changing season.
Rather than reaching for a store-bought syrup packed with refined sugars and preservatives, why not make your own at home? This homemade pumpkin spice simple syrup is not only delicious but also infused with healing herbal ingredients like Ceylon cinnamon, turmeric, ginger, and honey—bringing together natural sweetness and nourishment in every drop.
Ceylon cinnamon, often called “true cinnamon,” pairs beautifully with the deep flavors of ginger and turmeric, all known for their grounding, warming properties. Combined with the natural sweetness of honey, which has been used for centuries to support the immune system, this syrup adds a touch of wellness to your fall beverages and treats. Each ingredient contributes its own unique flavor while offering wholesome benefits without relying on refined sugars.
Despite the complexity of flavor, this recipe is super simple and took about 15 minutes to make. To start, add pumpkin puree, a high source of vitamins, particularly vitamin A in the form of beta-carotene which also helps boost the immune system, supports eye health and promotes healthy skin.
Along with that, add water, honey, coconut sugar, pumpkin pie spice, Ceylon cinnamon, whole cloves, chopped ginger and turmeric and vanilla beans.
Allow that to heat on the stove on medium heat. Once it comes to a bowl and the honey and coconut sugar are both dissolved you can turn off the heat.
Strain to separate the whole spices and vanilla beans. Pour this into a jar or syrup container to save!
I made an herbal pumpkin spice latte with this to get my daily dose of caffeine and satisfy pumpkin spice cravings while also nurturing my body with these healing, grounding ingredients. In my opinion, because of the use of fresh spices this was actually much tastier and more vibrant than a lot of store-bought alternatives, although being a healthier option.
To do this I added 1-2 tablespoons of homemade pumpkin spice syrup to a cup with coffee and oat milk. I topped this with a homemade pumpkin spice cold foam I made by whipping this with cream and about 2 tablespoons syrup!
Even though when someone says "pumpkin spice," many people's minds go directly to “latte,” this can be used in so many different ways: in tea, on top of pancakes, in baked goods, the opportunities are endless!
Recipe: Herbal Pumpkin Spice Simple Syrup
Ingredients:
- ⅓ Cup pumpkin puree
- 1 Cup water
- ½ Cup honey
- ½ Cup coconut sugar
- 1 Teaspoon Ceylon cinnamon
- 1- 2 Tablespoons pumpkin pie spice
- 1 Handful chopped ginger (or ½ teaspoon)
- ½ Handful chopped turmeric (or ¼ teaspoon)
- 1 whole vanilla bean (or ½ teaspoon vanilla bean paste)
Instructions:
- Add Pumpkin, water, honey, coconut sugar and spices into a small saucepan
- Bring to a simmer on medium heat
- After simmering for 5 minutes take off the heat and strain to remove large spices
- Add to a jar to save and enjoy!
