Recipe: Herb and Fennel Black Eyed Pea Salad

Ingredients: 

  • 2 Cans black eyed peas 
  • ½ Red onion
  • ¼ Cup green onions 
  • ½ Cup chopped fennel 
  • 1 Cup chopped rainbow chard
  • ½ Cup chopped mint
  • Juice of one lemon 
  • ¼ Cup red wine vinegar 
  • Salt and pepper to taste 

Instructions: 

  • Strain and rinse black eyed peas 
  • Chop herbs and vegetables and add to a bowl 
  • Squeeze in lemon and red wine vinegar 
  • Salt and pepper to taste
  • Lightly toss
