Healthy Chia Seed Pudding Recipe

Chia seed pudding is a really easy recipe to make and probably one of the best ways to start off your day. It's really healthy, packed with protein and delicious! This recipe is perfect to make the night before a busy morning and just grab on the way out.

Chia Seed Benefits

They have a really good amount of nutrients for the amount of calories they contain and almost all of their carbs are from fiber. These seeds are also a really good source of healthy fats and contain more omega-3 than salmon gram for gram. This recipe is a really easy way to incorporate them into your diet. They can also be easily thrown into smoothies or even salads.

Chia seeds are mucilaginous meaning they have a viscous and gelatinous consistency. In medicine mucilaginous plants are used to help with burns, wounds and internal and external swelling. In this recipe the mucilaginous properties of chia seeds is what gives it a pudding-like consistency.

Step-By-Step Recipe

The perfect ratio is 3 tablespoons chia seeds to 1 cup milk of choice.

I used oat milk but any type of milk will work just fine. I then put in a tablespoon of agave for sweetener but any type of sweetener would work just as well.

Next, put that In the refrigerator until it's thick (about one hour). I left mine in the refrigerator overnight to have for breakfast the next morning.

You could then eat it plain if you prefer, but I recommend adding some of your favorite fruit!

I blended up some fresh strawberries, raspberries and blueberries. I then just poured that on top and mixed it in. Adding chunks of fruit would also be really good. It's whatever you prefer! I really enjoyed the berry mixture though. And that's it!

Healthy Chia Seed Pudding Recipe

Ingredients: 

  • 3 Tbsp chia seeds 
  • 1 cup plant milk 
  • 1 Tbsp agave 
  • 4 strawberries blended 
  • Handful of blueberries blended 
  • Handful of raspberries blended

Instructions: 

Combine chia seeds, plant milk, and agave. Let that mixture rest for at least an hour or overnight. Blend/ chop fruit of choice, and add to the chia seed mixture once it’s thickened. Combine fruit and enjoy!
